About Southern Tap

The origins of Southern Tap homebrew lie in a little place called Tai Tapu, near Christchurch in the South Island of New Zealand.

Founded by father and son team Mal and Jordan Ryder, Southern Tap was born out of their passion for crafting the perfect low-carb, dry cider made from nothing but pure goodness.

This selfless pursuit has led them to personally test gallons of their creations, ensuring that every batch delivers the crisp, refreshing taste cider lovers crave.

With deep roots in cider-making and a dedication to perfection, Southern Tap sources only the finest ingredients from renowned orchards around the world, while maintaining their commitment to authentic, handcrafted brewing techniques.

Whether you’re new to brewing or a seasoned pro, Southern Tap offers premium cider kits that make it easy to craft delicious, artisanal ciders right at home.

STEP 1:PREPARE EQUIPMENT

THIS KIT CONTAINS:

  • 1x 1.5L (2kg) bottle of apple or fruit cider concentrate 
  • 1x sachet of organic yeast 
  • 1x sachet of organic nutrient

IN ADDITION, YOU'LL ALSO NEEED:

  • A fermenter (25L minimum) 
  • Brewing sugar (dextrose) 
  • Airlock 
  • Stirrer 
  • Hydrometer 
  • Bottles or keg for filling 
  • 1x Campden tablet (optional but recommended) 
  • A carbonation method: Your carbonation method will vary depending on whether you’re bottling or begging.

IMPORTANT BREWING NOTES:

Make sure your equipment is properly cleaned and sanitised before starting.

Minimise your cider’s exposure to atmosphere and sunlight as much as possible.
