How to Make Your Hot Sauce
Step 1 – Prep & Roast
- Put on the provided gloves before handling chilies. Avoid touching your face or eyes.
- Remove the stems from the dried chilies.
- Dry-roast them in a saucepan over low heat for 1–2 minutes until fragrant but not blackened.
Step 2 – Season & Cook
- Add 560ml water, 190ml vinegar (white, malt, or apple cider), and the Secret Spice Master Mix to the saucepan.
- Bring to a boil, then remove from heat and cover to let the chilies soften.
Step 3 – Blend
- Once cooled, transfer to a blender and process at high speed for 2–5 minutes until smooth.
- Some seeds will remain unblended—this is normal.
Step 4 – Strain & Adjust
- Use a strainer to separate the liquid from any remaining solids.
- Adjust the sauce by adding extra vinegar, salt, or a touch of sweetener if needed.
Step 5 – Bottle & Label
- Using the provided funnel, pour the sauce into the four glass bottles.
- Name your creation and label each bottle.
- Your sauce is ready to enjoy immediately, but flavours will deepen over a few days.
